Kontakt libraries are generally the best if you're looking for fidelity. Other than that it more or less comes down to using whatever works; there aren't any vsts or libraries that have everything you would ever need. A Hi fi orcestral library is good for some things, but sometimes you want something to sound more like snes, in which case you would use old romplers,
